Vitamin B 1 or Thiamine is a B complex vitamin, water soluble, crystalline in nature.

Food sources
Thiamine is found in the rice bran and yeast. Wheat grains, whole pulses, legumes, peanuts and other oil seeds are good sources of Thiamine. Pork and liver are also good sources and in the egg, it is concentrated in the egg yolk.

Functions
Thiamine in the form of Thiamine pyro phosphate (TPP) functions as a coenzyme necessary for the breakdown of carbohydrates to glucose. Thiamine may be involved in the proper functioning of the nervous system.
